Lasagna

I hope I can explain this right. I don't really have a recipe for it. It's just what my mom did growing up, but we've always really liked it.

Ingredients:
Ground beef
I jar of Spaghettie sauce (Chunky garden Prego is what I used-it's my favorite)
1 container cottage cheese
1 box lasagna noodles
cheese-mozzarella or cheddar (I just use whatever I have)

Brown ground beef and mix it with the jar of spaghetti sauce
spray a 9 x 13 baking pan with cooking spray
layer the bottom of the pan with the sauce/meat mixture (a very thin layer)
layer with the noodles and salt (No need to cook the noodles)
Layer with the container of cottage cheese
Layer with the sauce/meat mixture
Layer with the cheddar/mozzarella cheese
Layer with the noodles
Layer with the remaining sauce/meat mixture
Top with cheese
Cover and bake @ 350 degrees for 1 hour.

Note-you will need to use the sauce/meat mixture 3 different times, so make sure you portion it out, so you have enough left to top off at the end. (I always seem to not have enough at the end to top it off with.)

Cafe Rio Pulled Pork Recipe (I used Beef)

Cafe Rio - Pulled Pork

3 lbs pork roast 1 tsp salt

1 cup dark brown sugar 1 tsp chili powder

1 cup Worcestershire sauce 2 TB minced onions

1 tsp oregano 1/2 tsp garlic powder

1 tsp powdered ginger

Cook in a crock pot all day on low heat. One hour before serving, discard juice and shred pork. Then add 1 cup dark brown sugar and 1 cup red enchilada sauce. Serve in a salad or as pork enchiladas.

I used light brown sugar and still tasted pretty darn good! You can also use Chicken or Beef with this recipe.

Caruso Italian Spaghetti Sauce - Britney

The spaghetti sauce recipe is an all day making event. It is worth it though! You just jar it and freeze about 10 jars and have it on hand! Here is the recipe:

In a LARGE pot simmer:
4 cans of tomato sauce
4 cans of skinless italian diced tomatoes
3 jars of Classico Tomato and Basil sauce (save your jars)
sprinkle surface with:
salt and pepper
parsley flakes
oregano
basil

Beat in shallow dish:
2 eggs
1/4 cup of milk
3 T of parmesan cheese
Now place two pieces of bread in the egg mixture and let sit until soggy.

Saute in frying pan:
5 T olive oil
1 clove of garlic
1 medium diced onion
Add to the simmering pot of tomato base.

Cook up all your meat in a frying pan one at a time. Drain off fat and add to the simmering pot of tomato base...
12-16 oz ground mild Jimmy Dean light sausage
12-16 oz of ground Italian sausage
1 lb hamburger
1 lb of turkey burger
Remember your soggy bread mixture? Cook that up with one of your meats. Yup, stir it in and cook it up.

Add the following to your simmering pot:
2 cups or more grated zucchini
2 cups or more grated carrots

So now you have everything in your big big pot simmering for an hour. You may let it cool a little if you want, or just dive in and start pureeing it! Yup, start running that mixture through your blender or food processor until it is all smooth so the flavors will be released evenly. (And your kids will never know about those veggies you slipped in!) So I hope you have another big pot or bowls or such, to pour all your smooth sauce into one blender full at a time. Stir all together. Fill your jars leaving at least a couple of inches at the top. This sauce is still not "watered down". You may freeze each jar and add Classico sauce to desired consistency when unthawing, warming and serving it. You may also add the extra Classico sauce to desired texture and consistency while freezing it. I usually get at least 10 jars without "watering it down" with Classico before freezing! Let jars completely cool before freezing!

Britney's BBQ Pork Ribs

1 big bottle of Sweet Baby Ray's honey BBQ sauce
1 crock pot

Put your meat in your crock pot and cook for 6 hours on low. Defat the meat carefully because it will be so tender. Eat with your favorite sides or shred it up and put it on a bun for a delicious sandwich. The Pork ribs are about $7 for two slabs at Sam's club. They are packaged together and so yummy!

To unthaw in a hurry: I would take out your freezer bag and put it in some warm water until the frozen meat has come away from the bag. Put the frozen meat and sauce in an oven dish with tin foil and warm in oven maybe at 350 for an hour? When it is warm through it is ready to eat! It is all precooked with extra sauce in the bag! Warm your corn muffins in tin foil in the oven with your meat for the last 10-15 minutes.

Ashley's Taco Enchiladas

1 lb. ground beef
1 pkg. taco seasoning
refried beans
cooked rice
grated cheddar
tortillas

Sauce:
1 can cream of chicken
1/2 - 1 jar Pace picante hot sauce (to your taste)

Layer filling ingredients and wrap in tortillas. Lay in baking pan. Then pour on sauce. Bake 30 minutes or 1 hour if frozen.

Sweet and Sour Meatloaf

1 lb. ground been
1 minced onion or 1 Tbl. Dried minced onion
12 crackers, crushed or ½ C. breadcrumbs
½ tsp. salt
1 egg
1 C. tomato sauce (8 oz. can), divided
2 Tbl. Vinegar
¼ tsp. dried mustard
2 Tbl. Brown sugar

Preheat oven to 350 degrees and spray loaf pan. Mix ground beef, onion, crackers, salt, egg and ½ C. tomato sauce. Form loaf and place in greased pan. Mix together ½ C. tomato sauce, vinegar, dried mustard, brown sugar. Pour over and around loaf. Bake 1 hour at 350 degrees.

Side Suggestions:
I like to serve this with a salad or green veggie and some instant mashed potatoes. I add a little dried parsley to the water for the potatoes to give them color. I also add a little garlic powder to the potato flakes to give them some flavor.

Meatballs from March

Raised Swedish Meatballs

Mix in large bowl:
1 lb. hamburger
2 slices bread, tear into bits
¼ C. hot milk
2 Tbl. Chopped onion (dried)
1 egg
2 tsp. baking powder

Shape into meatballs and brown on cookie sheet in oven, on broil (watch closely).

Put in casserole dish (or crock pot) and cover with 1 can cream of chicken soup mixed with 1 can milk. Bake covered at 350 degrees for 1 hour. Serve over rice or noodles.
